2/3 cup shortening (Crisco)
2/3 cup sugar
2 eggs
1 tsp. vanilla or almond extract
2 tsp. baking powder

FROSTING:
2 1/2 cups powdered sugar
1 tsp. vanilla
red food coloring
mini choc. chips

Mix together the shortening and sugar until, light and fluffy. Add the eggs, one at a time, mixing after each addition. Mix in the rest of the ingredients. On a lightly floured countertop, take about one half of the dough and roll until about 1/8 in. thick. Using a Santa faced cookie cutter, press down and then lift the cookie and cutter with a metal spatula. Flip the cookie over, while still in the cutter, and press the dough gently into the cutter to make facial marks. You must sprinkle flour into the cookie cutter each time you cut a cookie so the dough does not stick to the cutter. Gently tap the cookie cutter on the cookie sheet to help release the dough. Repeat for each cookie. Bake at 375 degrees for 10-12 min., flipping sheets at the halfway point, if you are using two sheets. Do not allow the cookies to get brown. Let the cookies set for 5 min. before removing to cooling racks.
FROSTING:
In a small bowl, place 1 1/2 cups of powdered sugar. Add 1/2 tsp. vanilla. Add one tsp. of water and mix. You will add one tsp. of water at a time until the frosting gets to the desired thickness. Do not add too much water so that the frosting becomes too runny. Repeat with the remaining cup of powdered sugar and add the food coloring to get your desired red coloring.

Tip: The cookies must be completely cooled before frosting them. I prefer to make the cookies one day and store in an enclosed container. Then, I frost the next day. Mix your frosting on the day that you use it. Use the white frosting for Santa's tassel, the brim of his hat, his beard, his eyebrows and his moustache. Use the red frosting for the main part of his hat, rosy cheeks, red nose and a dab for his mouth. Attach mini choc. chips with a small amount of frosting for his eyes. It will take about an hour to frost one batch of cookies. Store in an enclosed container.
