3 firm cucumbers
1/2 large purple onion
1 small container of sour cream
salt and pepper to taste

Directions:
Directions:
Peal and slice cucumbers very thinly and place in serving bowl. Slice onion, thinly and cut rings in half. Mix cucumbers, onion and sour cream together, stir gently, add salt and pepper to taste and refrigerate. This is best if made a day or two in advance for the flavours to fully absorb.
