2 c flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 cup oil
1 cup sugar
1 tsp. vanilla
4 cups peeled, chopped tart apples
1 cup peacans or walnuts.

Variation: Reduce apples to 1 shredded apple and add
1/2 cup shredded coconut, 1/2 cup raisins and 2 cups
shredded carrots.

Makes 24 muffins or may use small bread loafs

DIRECTIONS: In small bowl, stir together flour,
cinnamon, baking soda and salt. Set aside. In a large
bowl, beat eggs until foamy. Beat in oil, sugar and
vanilla. Stir in flour mixture until blended. Stir in apples
and nuts. Spoon into muffin tins lined with paper muffin
cups. Bake at 350 degrees for 15-20 minutes or until
toothpick inserted in center comes out clean. Serve
warm or at room temperature.
