1½ Sticks of Butter (softened)
¾ Cup White Sugar
2 Egg Yolks
1 Tsp. Vanilla
1½ Tsp. Lemon Zest
1 Tbsp. Lemon Juice
½ Tsp. Salt
2 Cups of Flour

Lemon Glaze:
1½ Cups Powdered Sugar
1 Tsp. Lemon Zest
3 Tbsp. Lemon Juice
1 Tsp. Water

Combine butter and sugar. Mix on medium speed for about 2 minutes. Add egg yolks, vanilla, lemon zest, lemon juice and salt. Mix....slowly add flour but mix only until it is combined. Wrap dough in plastic wrap and chill for at least an hour.

Preheat oven to 350º. Line cookie sheet with parchment paper. Roll cookie dough into 1½ inch balls, place on parchment and press down with a cup to slightly flatten dough. Bake for 12 - 13 minutes or until slightly golden. Remove from oven and cool on cooling rack.

Make the icing by combining powdered sugar, lemon juice and zest. Add just a little water and beat until you have a smooth glaze. Drizzle glaze on cooled cookies. Allow to set and serve.
