1/2 cup butter + 6 tbsp.
3/4 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 1/2 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups oats
1 cup chocolate chips (optional)

Directions:
Directions:
1. Preheat oven to 350º.
2. Cream together the butter (room temperature, not melted) and sugars.
3. Add in the eggs and vanilla.
4. Next, add the flour (scoop in and level off in measuring cup), baking soda, and cinnamon.
5. Then, add 1/2 of the oats to a food processor and blend until the oats resemble a flour.
6. Lastly, add the 1/2 oat flour and remaining oats to the mixture.
7. If you are adding chocolate chips, stir in now.
8. Scoop out cookies with a cookie scoop (approx. 2 tablespoons) and roll into balls.
9. Bake for 8 mins or until the top is no longer shiny.
