Ingredients: (Original measurements in parenthesis) 1 cup raisins (1 lb) 1 cup nuts (1/2 lb) 1/3 cup maraschino cherries halved with juice (1 jar) 1 cup water (3 cups) 1/3 cup shortening (1 cup) 1/3 tsp baking powder (1 tsp) 1/3 tsp baking soda (1 tsp) 1 egg (3 eggs) 1/3 tsp nutmeg (1 tsp) 1 tsp cocoa (1 heaping tbl) 2 cups flour (5-6 cups) 1/4 cup dates (1/2 lb) 1 cup gumdrops chopped (1 bag) 3/4 cup sugar (1 1/2- 2 cups) 1/3 tsp salt (1 tsp) 1/3 tsp baking soda (1 tsp) 1/3 tsp cinnamon (1 tsp) 1/8 tsp cloves (1/2 tsp) 1 1/2 tsp vanilla (1 tbl)

Directions:Grandmas instructions: Boil raisins in water and sugar. Add all spices to raisins. Cook until plumped up. Cool. Add fruit, mix and add baking soda and baking powder, shortening, eggs and vanilla. Taste to see if it is sweet enough add more sugar if needed. Add flour, mix well. Put in greased bread pans. Bake at 400º for 15 minutes, then turn heat down to 350º bake for 45 minutes. Check to see if done. If not cook for a few more minutes. Grandma didn't use regular measuring spoons she used silverware to measure a tsp and a tbl. Grandma says: its just not Christmas for me until I make a huge batch. I make 10-12 cakes with the intention of giving them to neighbors for Christmas. Nobody appreciates fruitcake anymore so Kieth and I eat them all. We love them. |
