1 cup grated zucchini
1 cup sugar
1/2 cup shortening
One egg
mix together
2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
Sift together

Directions:
Directions:
Combine dry ingredients into the wet ingredients and add 1 cup raisins or 1 cup nuts if desired. Drop by spoon onto greased cookie sheet and bake at 375°F for 12 to 15 minutes. They should make three dozen cookies but it depends on if you add nuts and raisins and how big spoon use
