Ingredients:  
Ingredients:  
1/2 lb. butter (2 sticks room temperature)
2 c. sugar
1/2 tsp. salt (only add if you use unsalted butter. If you use salted butter then omit the extra salt)
1 lb. Ricotta
2 eggs at room temperature
1 tsp. vanilla
Grated rind of 1 orange or 1 lemon
4 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda

Glaze:
2 c. confectionery sugar
1/4 c. butter
3 tbsp. milk or more till smooth and pourable
1/2 the remaining zest plus a tbs of lemon or orange juice
1/2 tsp. vanilla

Directions:
Directions:
Cream butter; add sugar and continue creaming. Add eggs 1/2 the zest and Ricotta and vanilla; beat well. Sift together flour, baking powder and baking soda, salt (depending on butter used); add to batter.
Drop about a tbs. of dough on ungreased baking sheet. Bake at 350 degree oven about 10 minutes until edges are lightly browned. Cool.

Frosting:
Mix well and put on top of cookies and sprinkle with non pareils
Let cookies dry before stacking.
