¾ c. butter
1½ c. brown sugar
2 T. water
2 c. chocolate chips
40 Andes mints
2 eggs
2½ c. flour
1¼ tsp. soda
½ tsp. salt

Directions:
Directions:
In a saucepan over low heat, melt butter, sugar and water together. Add chocolate chips and stir until melted. Remove from heat and stir. Pour into a large mixer and let stand 10 minutes until cool. Beat eggs one at a time on high speed. Add dry ingredients until just blended. Chill dough. Roll into balls. Place on a cookie sheet.
Bake at 350º for 10 minutes. Place ½ mint on each hot cookie and spread when melted.

One of my freshman year teachers would make these cookies for special occasions for her students. Our graduation gift from her was the recipe for these cookies, they are definitely a favorite if you like mint chocolate! They are best served chilled.
