1 c. sugar
2 lemons
3 oz. butter
3 yolks
2 egg whites

Directions:

1. Grate the rinds off the lemons
2. Put the rind, the sugar, the butter, the juice of the lemons and the beaten eggs into a thick saucepan
3. Cook slowly over a low heat until it thickens
4. Cool slightly
5. Pour into jars
