Ham Bone
1 Package honey baked ham mixed bean soup *Use spice packet
1 clove garlic minced
2-3 ribs celery small dice
1 large yellow onion diced
3 large carrots sliced (or several small carrots diced)
1 15 oz. can petite diced tomatoes un drained
2 15 oz cans tomato sauce
Salt & Pepper to taste (Light on salt as ham is salty)

Sort through beans to make sure no rocks and rinse. Place in large dutch oven, cover beans with about 2-3 inches water and soak over night or at least for s few hours.

Drain Bean water out and add 2 its. fresh water, Ham Bone, Spice mix, 1 large onion diced, 1 clove minced garlic and the celery ribs.

Cover, bring to a boil, reduce heat to simmer and cook for 1 1/2-2 hrs. Remove ham bone(s) and break up large chunks of ham. Add tomatoes, tomato sauce, carrots Salt and Pepper.

Cook for another 2 hours or until ready to serve. The longer it cooks the thicker it gets. Sometimes if it is a little too thick, Ill add a little chicken stock or water.

Freezes really well.
