5 lbs. Idaho potatoes
Fluff of fresh parsley. roughly chopped
Whole yellow onion, quartered, sliced to 1/4" thick
Lots of garlic (minced, chopped, mashed)
1/2 cup olive oil
Salt, pepper, oregano

Directions:
Directions:
1| Preheat oven to 375º
2| Wash potatoes and pat dry
3| Peel and cube potatoes - quart potatoes and then slice to 3/8" to 1/2" pieces or 1/2 moons
4| Mix potatoes, garlic, onions, fresh parsley, salt, pepper, oregano and olive oil together.
5| Spread out in baking pan (spread, not piled)
6| Bake for 45 minutes
