Preheat oven to 350ºF. Cook rice in 1 cup water, set aside. Cook ground beef with onion until no red or pink remains, add salt and pepper to taste. Drain off all grease, if any. Cut tops off bell peppers and remove seeds. If using large peppers, sometimes can be halved. Mix meat and cooked rice together. Stuff peppers vey full; place in shallow 9x13-inch pan (glass or Corning ware). After all peppers are filled and in pan, pour about 1 cup of water into pan. Cover with foil and place in a 350 degree oven for 25 minutes. Remove from oven; uncover pan and spoon spaghetti sauce over peppers, Return pan to oven, uncovered, and bake 5 minutes more, serve. Note: If using cheese sauce, spoon over peppers after they are done, because it may burn.
