2 medium sized chicken breasts or 3 large thighs (Grandma used a whole chicken)
4 to 5 c. water
2 T. dry chicken bouillon
Flour - 1 cup at a time (flour can be hard to measure, she never told me how much)
1 tsp. salt
6 large eggs

Directions:
Cook chicken in a large pot with enough water to cover and cook until done. Remove from heat and cool. Strain broth and place back in pot. Add the 2 tablespoons of dry chicken bouillon, then add 4 to 5 cups water and bring to a boil. Meantime, make the dumplings - beat 6 eggs until well blended; add 1 teaspoon salt, and then add flour, 1 cup at a time, until a soft dough forms. Divide dough into thirds. Roll each third onto a floured board or counter until very thin. Cut into strips, then cut strips into small 2-inch or 3-inch pieces. When all dough is cut into dumpling pieces, drop into boiling broth and let simmer for 30-45 minutes, until they are tender. Meanwhile, debone the chicken; cut into small pieces, put in pot after dumplings have cooked 30 to 45 minutes, and then cook another 15 minutes. Eat and enjoy! Makes 6 to 8 servings.
