Ingredients: 2-3 pounds beef chuck roast 2 large onions, quartered 1 pound sliced mushrooms 4-6 potatoes cut into large chunks 1 12 ounce can or bottle of beer salt and pepper

Directions: |
Directions:Put meat into a baking pan. Season meat with salt and pepper to taste. Pour beer over meat and let marinate for a couple of hours (helps tenderize meat). Add onions, mushrooms and potatoes. Bake, covered in 350 degree oven for 1to1 1/2 hours. Can add water or beef broth if starts to dry out.

Notes: As told by Gail, Gramma Ginny used to tell the story of when the family would travel to the hunting lodge in the back woods of Pennsylvania where their father lived and worked as foreman in the coal mines. Each summer, the women would make this dish to feed the men from the mines who wanted hardy "stick to your ribs" meals. It helped that it was easy to make, inexpensive, and could be stretched to serve many.
We don't know where the name "shovel" came from but imagine this dish was "shoveled" onto plates as a welcome meal for these hungry men, hence "shovel steak".
Several of us remember being served this shovel dish by Charlotte too including the twins, Kara & Tracy.
