  • 1½ c raisins

  • 1½ c dates

  • 2 c sugar

  • 2 c boiling water

  • 5 TBS shortening



  • Boil 20 minutes/Cool.

    Add:

    • 3 c flour

    • 1 tsp baking soda

    • 1 tsp ground cloves

    • 2 tsp cinnamon

    • 1 tsp salt

    • 1 c chopped nuts

    • 1 c mixed candied fruit

    Mix as cake batter and bake 1½ hours (or less) at 325°. Best to use tin cookie pans with a top. Cut out a round piece of paper bag to put on the bottom and then pour in batter. Pour grape juice or red wine over while still warm. Let sit at least a couple of weeks.

    Moist and really tasty. Not dry like other fruit cakes. The family would definitely look forward to eating mom's special fruit cakes made for Christmas.
