  • About 3 medium Russet potatoes scrubbed, peeled, and diced

  • ½ onion, diced

  • 1 stalk of celery, diced

  • Water to cover

  • 1 to 1½ c whole milk

  • 2 TBS butter

  • salt and pepper to taste


  • Directions:
    Directions:

    1. Cover potatoes with water in a large soup pot.

    2. Cook over medium heat until fork tender, about 20 minutes. Remove from heat & drain potatoes. Saute onions & celery in pan with butter until onions are translucent, then add milk & potatoes to pan and place back on medium heat, allowing milk to bubble slightly around the edges of the soup pot, about 5 to 10 minutes.

    3. Salt and pepper to taste.
