Sauce: (adding the extra fennel is what made her sauce so good)

  • Mixture of both hot and sweet Italian sausage (take out of casing)

  • Ground beef

  • 4-5 cans of crushed tomatoes

  • 1-2 cans tomato paste

  • 1 onion chopped very small pieces

  • l carrot chopped very small pieces

  • 4-5 cloves of garlic, minced

  • Parsley

  • Oregano (not too much)

  • 1-2 TBS basil

  • 1-2 tsp fennel

  • Salt and pepper

  • 2 tsp sugar


  • Directions:
    Directions:

    • Take sausage out of skin, break apart in chunks, and put in a little bit of water to brown just a bit

    • Add ground beef, garlic, onion, and carrot (an put onion, garlic, and carrot in a blender). Simmer till cooked.

    • Add tomatoes, paste, parsley, oregano, basil, fennel, salt and pepper, and sugar. Add 3 tomato paste cans of water for each can of paste you add.

    • If tastes a bit bitter, can add a couple of teaspoons of baking soda. This removes some of the acid in the tomatoes.

    • Cook slowly for 1 to 1 1/2 hours. Adjust taste. If needs more fennel or basil, add a little bit at a time.




    You could probably use a sauce like Prego meat sauce and a can of crushed tomatoes (1 jar Prego to 1 can crushed tomatoes) and add to this the garlic, parsley, basil, fennel, and maybe sugar. It’s the fennel that gives the sauce more of the taste you would expect from lasagna.

    Mom got the recipe for the sauce and lasagna from the Pascal’s who lived across the street, They were Italian and she was very proud hers was a "real" Italian recipe.
