Notes: This is an old family recipe passed down through the generations. It was also one of my son, Peter’s favorites. He loved to pass on the old traditions to his children. His children did not also find this cookie as favorable. They called it the anis cookie.
One year when I was helping Caitlyn make the Pedniki she brought out the smallest little cookie cutters I had ever seen. I asked her why since it was much easier to cut and frost a larger cookie. Then she told me that her Dad would always makes his kids eat a Pedniki before they could have a cookie they liked. It was much easier to swallow the dreaded Polish cookie if it was tiny. Peter always did have an unusual sense of humor!
