2 large yellow onions
4 boneless pork chops
3 Tbs butter
2 Tbs olive oil
1½ c plus 4 Tbs beef stock
1 Tbs Dijon mustard
1½ Tbs balsamic vinegar
½ tsp worcestershire sauce
2½ Tbs flour
4 slices provolone cheese
4 slices Swiss cheese
Salt
Pepper
Garlic powder

Preheat oven to 400ºF. Heat an oven-safe pan on medium-high heat. Add butter and 1 Tbs oil. Peel and slice the onions. Add onions and sautee for 3-5 minutes. Mix ½c plus 4 Tbs of beef stock, mustard, balsamic vinegar, and worcestershire sauce. Add to pan. Cook for 11-15 minutes. Season pork chops with salt, pepper, and garlic powder. Transfer onions to a bowl. DO NOT WIPE OUT PAN. Reduce heat to medium. Add last Tbs of olive oil. Sear pork chops 4-8 minutes each side, or until golden brown. Add flour to the onions and coat evenly. Transfer chops to a plate. Add onions back to the pan and cook for a minute, stirring constantly. Add remaining 1c of beef stock and stir often until boiling. Season. Nestle pork chops into beef stock and onions. Drizzle 1-2 spoonfuls of stock over pork chops. Lay a slice each of provolone and Swiss cheese over each pork chop. Bake 8-10 minutes. Broil 3-5 minutes or until cheese is browned and bubbly. Serve smothered.
