Roast beef, thick, cut into big cubes
potatoes, diced big
onion, diced big
green bell pepper, diced big
carrots, big chunks
sweet potato, big chunks (optional)
2 cans tomato sauce
some flour for thickening gravy
salt
pepper
cumin
garlic powder

Directions:
Directions:
Sear the roast in a skillet with oil
Place the meat in a big roasting pan.
add all the veggies and spices.
in the skillet you can brown the flour (amount depends on how much you're making. i usually use two to three spoonfuls cause I make it for all of us. lol) add water to the browned flour and make it into a thick gravy consistency.
pour that over the meat and veggies.
pour the tomato sauce over that and you will need to add more water so it can boil for a while in the oven and it cooks the meat. Once meat and the veggies are all soft and thoroughly cook, check for the consistency of your gravy and for spices. if it hasn't thickened to your liking, brown some more flour, make it into a thick gravy and add it to the pot. Add any spices at this time too. leave in oven till you get the thickness you desire.

This is how Granny made her pot roast and I make mine this way sometimes too. Y'all can cook this in a crockpot too, on high for about 2-3 hours or 5-6 hours on low, just till the meat and veggies are done.
