3/4c superfine sugar
1/4c brown sugar
1c peanut butter
1 egg
1/2 tsp vanilla
1/3c raspberry jam
* this is not a mistake. There is no flour in this recipe

Preheat oven to 375'
Mix together all ingredients except jam. Roll mixture into 1 inch balls. If they are a bit sticky lightly flour your fingers. Place balls onto a non-stick cookie sheet about 2 inches apart. Using a floured thumb make a deep impression in each ball. Bake for 10-12 minutes. Allow to cool on a rack. Fill impression with jam.

Jocelyn -They were easy to make and (I thought) quite tasty. The only problem I had was not getting the thumbprint to hold during cooking (I had to punch down again when I took them out of the oven). Someone suggested using a thimble and I thought that sounded like a good idea to make a smaller but deeper impression.
