Ingredients:  
4 eggs separated
2 tbsp. boiling water
Pinch of salt
⅔ c white sugar
1 lemon and the rind grated

Directions:
Directions:
Beat egg whites until stiff and add half of the sugar.
Drop yolks into a double boiler and beat.
Add grated rind and juice of lemon, water and sugar.
Cook 3 - 4 minutes until thick, stirring constantly.
Remove from heat and fold into egg whites.

Spoon into dessert dishes and enjoy!
