2 c. whipping cream
¼ c icing sugar
¼ c finely chopped candied ginger
1 tbsp. dark rum or 1 tsp vanilla
About 50 thin ginger snap cookies (store bought ones work well)
Candied ginger to garnish

Directions:
Directions:
In large bowl whip cream until stiff peaks form. Fold in 2 tbsp. each of sugar, ginger and flavoring. Spread each cookie with 2 tsp of the whipped cream mixture and sandwich together to for 2 - 9 inch logs. Line a 9 x 5 loaf pan with saran wrap and arrange your 2 logs side by side in the loaf pan. Fill any gaps with whipped cream mixture. Before serving turn out onto a platter and ice with 1 cup of whipping cream and candied ginger for decoration. Cut in a similar fashion to cutting a loaf cake and serve slices on a small plate. Enjoy!
