¾ cup ghee
½ cup sugar
½ cup brown sugar
2 large eggs
1 tsp vanilla
2 cups grated zucchini/courgette
1 cup all-purpose flour blend
¾ ground almonds
2 Tbsp flax and chia seeds, ground
½ tsp guar gum
1 cup desiccated coconut
1 cup walnuts, chopped

Frosting
2 cups icing sugar
2 Tbsp milk
2 Tbsp ghee
1 tsp cinnamon

Directions:
Directions:
Preheat oven to 180ºC/350ºF and grease a large baking tray. Cream wet ingredients and then blend in dry ingredients. Spread in prepared tray and bake for 30 minutes. While bars are cooling, make frosting and spread over bars before serving.
