⅓ cup cornstarch
1½ cup sugar
2 cups water
½ tsp salt
3 egg yolks, beaten
⅓ cup lemon juice
3 Tbsp ghee

Meringue
3 egg whites
¼ tsp cream of tartar
½ tsp salt
6 Tbsp sugar

Roll out pastry and line a pie plate. Bake for 10 minutes at 180ºC/350ºF. Mix sugar and cornstarch in saucepan, gradually stir in water. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil for one minute. Slowly pour half of the hot mixture into the egg yolks, whisking the mixture to temper the eggs. Blend in the remaining hot mixture and boil another minute, constantly stirring. Remove from heat and stir until the mixture is smooth, blend in the butter and lemon juice and pour into pre-baked crust. Increase the oven temperature to 200ºC/400ºF. Whip up the meringue by mixing the egg whites with the cream of tarter until soft peaks form, then adding in the salt and sugar and continuing to beat until the meringue is stiff and glossy. Spoon over the lemon filling and bake for 8-10 minutes.
