1 pkg jelly or jell-o (cherry, strawberry, raspberry work best)
1 cup boiling water
2 cups vanilla ice cream, softened

Optional Possibilities
1 cup miniature marshmallows
½ cup chopped nuts
½ cup chopped fresh fruit

Directions:
Directions:
Dissolve the jelly in the boiling water in a serving-type dish. To set the jelly, mix in the ice cream and any other possibilites. Cover the jelly and refrigerate to set. The jelly will settle to the bottom, leaving the ice cream on the top, slightly tinted to the colour of the jelly used.

In my mind, this recipe is synonymous with Grandma Lauer. The only time I've ever enjoyed this jell-o dish was when she made it and it always seemed to be a summer dish brought to picnics or potlucks. For us, it's a fun, simple dessert.
