Crust
1 cup all-purpose flour blend
½ cup ground almonds
½ cup coconut flour
1 cup ghee
½ cup icing sugar

Filling
4 eggs, beaten
2 cups sugar
⅓ cup lemon juice
¼ cup arrowroot
½ tsp baking powder

icing sugar for dusting

Directions:
Directions:
Preheat oven to 180ºC/350ºF. Whisk dry ingredients together for the crust then rub in ghee. Press into a 9x13 cake pan, bake for 25 minutes. While the crust bakes, blend the ingredients for the filling. After baking the first layer, carefully pour the filling over the crust and bake for another 25 minutes. Remove the pan from the oven and allow to cool completely before dusting with icing sugar, cutting into squares and enjoying.
