4 Tbsp ghee
4 Tbsp peanut butter
½ cup icing sugar
½ cup self-raising flour blend (or all-purpose flour blend + ½ tsp baking powder)
¼ cup ground almonds
2 Tbsp flax and chia seeds, ground
¼ tsp guar gum
¼ tsp bread soda
¼ tsp salt

Filling
4 Tbsp ghee
4 Tbsp peanut butter
2 Tbsp icing sugar
2 Tbsp golden syrup or honey
1 egg white
½ tsp vanilla

Cream wet ingredients for dough and then blend in remaining ingredients. Chill the dough, wrapped for as little as 30 minutes, no more than 2 hours. When ready, preheat the oven to 180ºC/350ºF. Drop dough onto greased or lined baking tray about one inch apart, press down on each cookie with the bottom of a glass. Bake for 5-10 minutes, the longer the crispier. Cool on a wire rack.

Cream the filling ingredients together and spread on the bottom of a cooled cookie then top the filling with another cookie. Store in an airtight container.

I don't know what it is about peanut butter - but in my travels, it seems to be an American thing. These happen to be a sandwich biscuit that I could subconsciously eat until the entire batch is gone. Never mind a spoonful of peanut butter - I prefer these, followed up with black coffee or cold milk.
