Ingredients: Batter ¾ cup cola ½ cup ghee ¾ tsp bread soda
1½ cups sugar 2 eggs ½ cup kefir 1 tsp vanilla
1½ cups self-raising flour blend ½ cup ground almonds ½ tsp guar gum 1 Tbsp cocoa powder, sifted
Frosting 1 Tbsp cocoa powder, sifted 1½ cups icing sugar, sifted 2 Tbsp ghee 3 Tbsp cola

Directions:Boil the cola with the butter, when the butter is melted, add in the bread soda, which will fizz up, set aside.
Preheat the oven to 170ºC/325ºF. Cream the sugar, eggs, kefir and vanilla. Whisk in the dry ingredients and continue stirring to combine. Add in the cooled cola mixture, blend and pour into a prepared cake pan, preferably a bundt pan, although a rectangle-type pan will work too. Bake the cake for about 40 minutes or until a knife inserted in the centre comes out clean. Remove from oven and allow to cool completely. Make the icing and drizzle over cake. |

Notes: Since our children were old enough to tell me what kind of cake they wanted for their birthday, I've done my best to oblige their requests. Over the years, I've made mackerel, dolphin, a dinosaur, Miss Frizzle's Magic School Bus, an ice skate, a baseball stadium, a minion, a shark, an octopus (pictured) and most recently Wonder Woman. I'm far from a professional; however, it's still fun to stretch my creative, culinary mind.
This cake works well when you need to "build" a cake, although, rice crispie treats really come in handy for extra shape and height.
