1½ cups ground almonds
¼ tsp salt
¼ tsp bread soda
¼ cup ghee
2 Tbsp sugar
1 tsp vanilla

Sift together dry ingredients, rub in ghee and vanilla. Use a little water or kefir to bring dough together. This is not a workable dough and therefore should be pressed into the pie plate. For a pre-baked shell, bake for 10-15 minutes in a preheated oven, set to 170ºC/325ºF.

This is a versatile pie crust, as you can leave out the sugar and vanilla for a savoury dish like quiche. It can also be made to taste a bit like a graham cracker crust by substituting part of the almonds with gluten-free oat flour or buckwheat flour and using brown sugar and cinnamon in place of the usual sugar and vanilla.
