4 potatoes - (or more depending upon who's eating them)

butter for pan frying

1 egg

Flour

Peel potatoes and place into a large bowl with cold water.

Scrape one potato at a time into a separate bowl, do not drain out any liquid left by potato

Add beaten egg

Hand stir in flour. (there is no set amount, but mixture should not be too thick or too thin) Practice makes perfect.

In a large non stick frying pan, melt butter on med/high heat.

When butter has melted, add a scoop of potato mixture to form a pancake like circle.

Flip pancake once browned.

Pancakes are ready when both sides are brown and crispy.

Eat hot!

Personal Notes:
Grandma used PLENTY of butter when cooking potato pancakes. The second batch (and from thereon) is always the best tasting. Salt is a must when eating these ;)
Can be eaten with applesauce.
