Ingredients: 1/2 cup celery 1/2 cup red bell pepper (or red and green) 1/2 yellow onion 1 tablespoon butter 2 tablespoons butter for final sautéing of cakes 1/2 cup finely diced smoked salmon 1 pound fresh lump crab (or one pound chopped fresh salmon) 1/4 cup Hellman’s mayonnaise 1 cup Panko bread crumbs 1/4 cup seasoned Italian bread crumbs 2 eggs 1/4 cup cilantro, finely chopped 1 teaspoon dried dill 1 teaspoon Tony Chachere’s seasoning

Directions: |
Directions:Sauté celery, red pepper and onion in 1 tablespoon butter. Cool.
Place cooled vegetables in bowl. Add smoked salmon and remaining ingredients except crab and mix well.
Toss crab into mixture. Scoop onto parchment lined cookie sheet with 1 to 1 1/2 inch cookie scoop. Chill 15 minutes.
Flatten in to patties. At this point patties may be frozen for cooking later.
Sauté both sides in 2 tablespoons butter for 1 to 2 minutes on medium high heat.
Bake at 375 degrees for 5 minutes. |
