1# graham crackers
1 C. butter
1/2 C. milk
1 C. sugar
1 beaten egg
1 C. shredded coconut
1 C. chopped pecans
1 C. graham cracker crumbs (part of the 1#)
Directions:
Directions:
Roll enough graham crackers to make 1 C. I put the graham crackers in a Ziploc bag and crush with a rolling pin to do this step. In a saucepan, melt butter; add milk, sugar and egg - cook until it boils, stirring often; remove from stove. Add coconut, pecans and crumbs to pan. Cover bottom of a 9 x 13 glass dish with 15 squares of graham crackers. Pour 1/2 of warm mixture over the top of the crackers and spread to cover. Add 15 more crackers on top of this. Add the rest of the warm mixture and then add another layer of the crackers. Chill overnight: cut into 1 inch squares.

Grandma Cole always brought these to the family gatherings when she was able to cook, so these have become a family favorite. Bart thinks these cookies have to be served at all holiday dinners and is always requesting them.
