Zucchini Cake Recipe

3 eggs
2 c. flour
2 c. sugar
1 tsp. salt
1 c. oil
2 tsp. baking soda
2 c. grated zucchini
tsp. baking powder
3 tsp. vanilla
1 c. chopped walnuts (optional)
c. chopped dates (optional)


2 c. powdered sugar
1 stick margarine
1 tsp. vanilla
8 oz. cream cheese (room temp.)
May need to add a little milk to spread.

Mix first 5 ingredients together. Mix last 4 ingredients and add to first mixture. Place in 9x13 greased pan. Bake at 350 for 45 minutes.
Let cool.
