4 cups yellow squash (cubed)

2 T grated onion

1/3 cup shredded carrots

1 cup sour cream

1 can cream of chicken soup

Pepper to taste

I box Cornbread Stove Top Stuffing Mix (Prepare as Normal)




Directions:
Directions:
Cook squash in 11/2 cups of water to which 3/4 t salt has been added.

Cook for 10 minutes.

Drain and add next 5 ingredients.

Butter a baking dish and put 1/2 the stuffing in the bottom of the dish. Add squash mixture.
Top with remaking stuffing. Sprinkle with sliced almonds if desired.

Bake at 350º for 30 minutes until hot and bubbly.

Mom (Grandma) always made this in the summer when squash was plentiful. I do the same. I hope you enjoy it as much as she did.
