1 c butter
2 1/4 c packed light-brown sugar
1 T granulated sugar
2 1/4 c old-fashioned oats
1 T all-purpose flour
1 large egg, slightly beaten
1 t vanilla extract or 1/2 t almond extract

Directions:
Directions:
1. In a large sauce pan, melt butter over low heat. Stir in both sugars, then remove from heat. Stir in oats.

2. Stir in beaten egg and vanilla. Refrigerate 10 min.

3. Heat over to 375 degrees. Line 2 cookie sheets with foil. Lightly grease foil.

4. Drop scant Tablespoonfuls batter onto 1 sheet, leaving plenty of room for the cookies to spread (7 or 8 is about all most cookie sheets will take) You may fill second sheet as soon as first is in oven.

5. Bake, one sheet at a time, 7 minutes, watching carefully. Cookies should be deep golden brown around edges. Remove cookie sheet from oven. Slide foil onto wire rack or countertop. Cool cookie sheet completely before adding next batch of cookie. Cool cookies completely.

6. Carefully peel foil off of cookie. Don't stack them. Reuse foil (don't grease it again) to bake next batch. Store cookie tightly covered with waxed paper between layers.

Mrs. Appleyard, who this recipe comes from, notes, do not use margarine, quick-cooking oats, or dark brown sugar. Also, do not try to half the recipe. And don't try to make on a humid day. A clear crisp morning is what they prefer.

These cookies are simple divine.

I'm pretty sure mom had a version with candied cherries finely diced in them. I will have to check with her.
