1 ¾ c all purpose flour
½ tsp baking powder
½ tsp salt
½ tsp baking soda
½ c granulated white sugar
½ c shortening
1 large egg
2 tbsp milk
1 tsp vanilla

Filling:
1 ½ c raisins
⅓ c granulated white sugar
¼ c water
½ tbsp grated lemon rind
1 tbsp lemon juice
½ c finely chopped nuts


Directions:

Preheat oven to 350º

Sift flour, baking powder, baking soda and salt together before combining with sugar, shortening, egg, milk and vanilla on medium speed in a stand mixer.

Combine all filling ingredients in a sauce pan and cook over medium heat for 5 minutes, stirring to help raisins break down.

Roll dough about ⅛” thick and cut cookies into 2 ½” diameter. Pause small scoop to place filling on one cookie round ad cover with another. Using a floured fork, crimp edges together. Poke air holes in the top of the cookie with a fork. Bake 10 minutes.
