Ingredients:
Ingredients:
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
14 tablespoons butter
1/2 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon salt
2 teaspoons vanilla
1 large egg
1 egg yolk
1 3/4 cups chocolate chips

Directions:
Directions:
Preheat oven to 375 degrees.

Heat 10 tablespoons butter in 10-inch skillet over medium-high heat until melted, about 2 minutes.

Continue cooking, stirring until butter is golden brown and starts to smell nutty and toasty (I think it smells sort of like toffee) 1-3 minutes.

Pour melted butter into the mixing bowl and Stir the remaining 4 tablespoons butter into hot butter until completely melted.

Add both sugar, brown sugar, and vanilla to bowl with butter and mix until fully incorporated.

Once the butter has cooled (warm ok but hot will cook the eggs) add egg and yolk and mix until mixture is smooth with no sugar lumps remaining, about 30 seconds.

Stir in flour, baking soda, salt, and chocolate chips and mix until just combined.

Use approx 2-3 tablespoons per cookie and drop onto an ungreased baking sheet 2 inches apart.

Bake at 375 degrees for 8-10 minutes

Personal Notes:
These really are 'perfect'.

If you don't feel like toasting the butter, you can just soften (room temperature) all 14 tablespoons of the butter and move on to the next step. But toasting really adds great flavor!

*I'm almost always out of vanilla (because I'm cheap and it's ridiculously expensive) so most of the time I just leave it out.

My dad used to eat a whole batch of these cookies every day (for reals).
