Mixture A: ½ cup butter, 1 cup white sugar ,1 egg

Mixture B: 2 small or one large mashed banana/s, 1 tsp. baking soda, ½ cup milk

Mixture C: 1½ cups flour, 1 tsp. baking powder, 1 tsp. vanilla or almond extract

Directions:

Preheat oven to 350º and butter an 8-inch pan.
Beat mixture A in a large bowl. Stir mixture B in a small bowl. Combine the two and add mixture C. Turn into the prepared pan and bake for 30 to 40 minutes.
Cool the cake well before icing.

Icing:
2 tablespoons soft butter
1 cup icing sugar
⅛ tsp. of extract (Grandma always used almond)

Cream the butter and sugar a little at a time until you have the desired consistency for spreading. Add the extract and blend well. Remove all crumbs from the cake before icing.

This is a really nice banana cake and I have been making it since I was five years old! As the story goes, I even got up once in the night and went down to the kitchen to try and make it! Mother found me there covered in flour, with "banana hands".
