Ingredients: 150ml milk 1 egg 115g butter or margarine 115g caster sugar 85g golden syrup 175g self raising flour 25-40g cocoa (depending how chocolatey you like it but I recommend 40g) 1 tsp bicarbonate of soda
Line the bottom of two 8 inch/22cm cake tins

Directions:Mix together the milk and egg.
Melt the butter, sugar and syrup in a saucepan.
Sift the flour and cocoa into a large bowl and add the bicarbonate of soda.
Add all the other ingredients to the flour mixture and mix well.
Pour into the cake tins and cook for 20 minutes at 180C or 160C fan.
Take out and turn onto a wire rack.
Butter Icing: 150g icing sugar, 100g soft but not melted butter and 25g cocoa. Mix together till soft and spreadable. You can do it with mixers but you will need to start slowly because otherwise the icing sugar goes everywhere. You can use this icing in the middle and on top of the cake. |

Notes: Alternative Easy Chocolate Frosting: 25g cocoa powder 300g icing sugar 50g butter 50ml double cream
Sift the cocoa and icing sugar together into a bowl. Melt the butter for a few seconds in the microwave, or in a small pan over a low heat. Mix the melted butter and the cream into the sugar and cocoa, and stir until smooth.
Use while smooth enough to spread, or thin with a little boiling water for a runnier icing.
