For the dough:
3-3.5 c. all purpose flour (start with 3 cups, add if needed)
2 large eggs
1/3 -1/2c. sugar
1tsp. vanilla extract
1/2 tsp. baking powder
3 sticks of unsalted margarine thawed. (I use Fleishman's parve unsalted)
for the filling:
1 tsp. cinnamon
1/4 c. finely chopped walnuts
powdered sugar to sift on top of cookies
date spread (you will spread it on the dough so depending how much you
like will determine the amount you use.
Alternative fillings:
chocolate spread, fig spread, Nutella spread, or anything you like

1. In a mixer whip the eggs, sugar, and baking powder.
2. Slowly add the margarine, vanilla, and flour.
3. Continue mixing on medium speed to form dough, if needed add flour.
4. Place in the refrigerator for 15-30 minutes.
5. Pre-heat oven to 350ºF.
6. Divide the dough into 4 balls.
7. On a floured surface, roll out each into a rectangular shape.
8. Spread the date spread, sprinkle cinnamon, and the nuts. I do 2 rolls with the date spread and 2 rolls with chocolate spread and cinnamon without nuts or a fig spread.
9. Roll into one long straight snake. Using a knife mark the roll for cutting the cookies later, about 1/2 inch apart. Bake in the oven for about 25-30 minutes, making sure the top and bottom are slightly browned not burnt. Some like it less browned and doughier.I prefer them well baked.
10. Take out of oven, sift the powdered sugar on top and let cool. Cut cookies where they were marked and enjoy! Store in a container for up to 1-1/2 weeks. These can be frozen and taken out later.

My friend Monik gave me this recipe many years ago. I have been baking these cookies ever since and they are a favorite desert with tea and coffee. I have since changed the recipe a little. All of my friends love them and even request I bake these for them.
