2 cups sliced yellow sumer squash
1 cup chopped onion
1 cup grated med. or sharp cheddar cheese
1 stack Ritz crackers, crushed
2 large eggs
1/2 cup milk
2 tsp. salt
pepper to taste

Directions:
Directions:
Cook squash and onions until tender. Drain and mash. Add cheese. Pour in eggs and milk and stir. Add 1/2 bread crumbs into mixture and stir. Pour in 1/2 stick melted oleo and stir well. Put into greased casserole and sprinkle with remaining crumbs. Bake at 400 degrees for 20 minutes.
