6 medium sweet potatoes
1 15oz. can coconut-almond frosting
1 tsp vanilla extract
1/2 tsp ground cinnamon
2 cups minature marshmallows

Directions:
Cook potatoes in boiling water 20 to 25 minutes or until tender. Drain and cool. Peel potatoes and mash. Combine mashed sweet potatoes, frosting, vanilla, and cinnamon; mix well. Spoon into a greased 12x8x2 inch baking dish. Bake uncovered at 350 degrees for 18 minutes. Sprinkle with marshmallows and continue baking 5 minutes or until marshmallows are thoroughly heated.
