6 1/2 cups flour
3/4 cup honey
1 1/2 cup brown sugar
2 tsp vanilla
4 tsp cinnamon
1 tsp aniseed or 1/4 tsp oil
1 tsp cloves
1 cup milk
2 Tbl butter
2 tsp baking soda
2 tsp baking powder
1 egg
1 3/4 tsp salt

Directions:
Bring honey, sugar and milk to boil. Remove from heat and put it into a large bowl. Cool. Add butter and egg. Add sifted dry ingredients and mix thoroughly. Place in an 8x8 pan, freeze overnight.

Take 1/4 of the dough, roll 1/8-1/4" thick. thin cookies bake crisp and thicker cookies turn out nice and chewy. Put on greased pan and bake at 350 degrees from 9 min until done - according to thickness. Take out another 1/4, proceed as above. This dough must be kept cool; otherwise, it absorbs too much flour.

The Egyptians, Greeks and Romans considered honey to be a gift of the gods and hoped for magic, healing and life-enhancing properties from the honey cake. So they not only ate honey cakes, but they often worm them into battle as a talisman or were buried with them. The Teutonic people in pre-Christian Europe used the honey cake as protection against evil spirits who were abroad during the twelve nights of Christmas. In the 13th century, the honey cake became lebkuchen. This particular recipe would have been known as Brown Lebkuchen.
