2 cups butter
2 eggs
5 cups flour
2 tsp vanilla
1 tsp baking powder
1 1/3 cup sugar
1/2 tsp salt
Optional: 1 cup chopped walnuts or other mix-ins as desired

Directions:
Directions:
Preheat oven to 400 degrees.
Use softened butter (do not melt it). Add sugar and blend well. Add unbeaten eggs and vanilla. Blend until smooth. In a separate bowl, combine flour, baking powder, and salt. Add flour combination gradually into the wet mixture until blended well.

Bake at 400 degrees for 6-8 minutes until light golden brown.

Note: This is a double batch. You can divide in half, roll the remainder in wax paper and freeze for future use (this is why they were called "icebox cookies"). My sister and I looked forward to visiting my aunt and uncle because we always knew there were cookies in the freezer, waiting to be made.
