1 egg yolk
3/4 teaspoon Dijon mustard
1 teaspoon lemon juice
1/2 cup bacon fat (liquid form – the more crunchy bacon remnants the better)
Sea salt
Pepper

Directions:
Directions:
Combine the egg yolk, mustard and lemon juice in a food processor or blender.
Make sure your bacon fat is in liquid form (but not hot). Gradually add the bacon fat until the mixture starts to stiffen and emulsify. Once it starts to emulsify, you can add the fat more quickly. If the mayonnaise is too thick, just blend in 1 teaspoon of boiling water to thin it. Add salt and pepper to taste.

Note: Next time someone brings out one of those sissy vegetable trays at a party, bust out this bacon mayonnaise as a dipping sauce and watch everyone turn into a caveman.
