1 cup coconut oil, softened
1 cup ghee
2 eggs
1 tsp salt
1 tsp cream of tartar

1 cup icing sugar
1 cup sugar
1 tsp vanilla
1 tsp bread soda

4½ cups all-purpose flour blend
1 tsp guar gum

Directions:
Directions:
Preheat the oven to 190ºC/375ºF. In a large mixing bowl, cream the wet ingredients starting with the fats, when these are smooth, add in the eggs, salt and cream of tartar - blend. Slowly add the remaining ingredients, a little at a time to incorporate all the dry ingredients. When you've achieved a smooth dough, roll walnut-size pieces into balls and bake on a cookie tray for 12-15 minutes. Alternatively, you can chill the dough until ready to bake.

The first Christmas my Grandma Lauer was gone, my Great-great-great Aunt decided to bake Grandma's sugar cookies for the holiday. Well she made the cookies 3 times, all of the batches flopping and in the end realised it was because the handwritten didn't list baking soda. Ironically, that same Christmas I made a few of Grandma's recipes and none of mine turned out - it still boggles our minds when we talk about that first Christmas without Rene.
