1 can @27 oz crushed pineapple
1 pkg 10oz shredded coconut
4 eggs
1 1/2 C sugar
4 C flour
2 tsp salt
2 tsp baking soda

Directions:
Directions:
Combine pineapple and coconut in mixing bowl. add eggs (beaten until light). add sugar and mix well. Sift flour, measure and sift again with salt and baking soda. add to fruit mixture. Mix until well blended. Pour into 3 greased loaf pans. Bake at 325º for 1 hour. Remove from oven and turn onto wire racks to cool.
