3 cups flour
1 teaspoon soda
1/2 teaspoon salt
Sift together.

Cream:
1 cup butter
1 cup sugar
1/2 cup packed brown sugar
2 eggs
2 tablespoons water
1 teaspoon vanilla

Starlight mints, Andes mints or Mint Hershey Kisses

Cream sugars and butter. Add the rest of the wet ingredients. Add dry ingredients and mix well. Cover and refrigerate at least 2 hours.

Open candies. I use one Andes mint for each cookie. I use about a tablespoon of dough per cookie. Enclose chocolate in dough. Place on greased cookie sheet about 2 inches apart. Top each with a half of walnut or pecan. Bake 350 degrees for 10 to 12 minutes.

I like to use the Andes mint with mint on the outside and chocolate in the middle. But they are hard to find.

I also read that if you bake your cookies at a high heat 400-425 for a shorter time they will be softer. I have tried it a couple of times and it does work.

Camp JIM in Brainerd Minnesota, was started by Uncle Arnold Frei. He had a burden for children's souls. He worked tirelessly to save any and all children who came to camp.

Camp JIM made a cookbook with a great number of wonderful recipes. I think it must have come out in the 50's. This recipe is from that cookbook. Also, the Poorman's Frosting was from this book.

Those founding fathers worked so hard to spread the Good News! Who is going to take over for them?
